The name is an acronym for Some of This, Some of That, which sums up what owner JR Roseman set out to serve at the 34-seat brick-and-mortar version of his Cajun food truck. The Panama native perfected many of his recipes while putting food on the table for his kids, including a soul-warming version of red beans and rice (he inherited the starter recipe from his grandfather). The location is rough and chic all at once, mixing elements like corrugated metal with an enormous antiqued mirror—a wink at elegance. The food is deliciously gloppy and saturated with flavor. Sweet and meaty crawfish étouffée joins jambalaya and gumbo on a menu that goes deep into the Bayou with po’ boys of the shrimp, sausage, catfish, and crab variety, and even an alligator sandwich.
