Filets and strips topped with rich accoutrements like foie gras and truffle butter remain the stars of the menu. Vegetarians won’t find much here, even in the way of sides—au gratin potatoes are topped with crispy Smoking Goose bacon, and even the smoked sweet-cream corn is infused with country ham.
