Chinese Pancake: What’s In That?

Jianbing is a hand-held Asian pancake and one of the most popular breakfast street foods in China. Get one made while you wait at Asian Snack, a busy food counter tucked inside Saraga, Indy’s destination international grocer. Mung beans form the base of pancake batter that is fried on a large circular griddle. Once the batter begins to cook, two eggs are cracked on top. A heavy sprinkling of sliced green onions and black sesame seeds flavor the egg. After the pancake is flipped, a large, springy fried dough stick is placed in the center. Three different sauces are applied, including hot-chili oil, sweet hoisin, and savory tofu sauce. The pancakes are folded and ready to eat, no utensils necessary.
